No-Bake Cranberry and Coconut Cookies

Yield: 15 cookies
Ingredients:
¼ cup unsweetened shredded coconut
½ cup all-natural smooth almond butter
2 to 3 Tbsp. unsweetened coconut milk beverage or almond milk
¼ quick-cooking rolled oats
1/3 cup dried cranberries
1½ scoops Chocolate Vegan Shakeology
Preparation:
1. Place coconut in small bowl. Set aside.
2. Combine almond butter, coconut milk beverage, oats, cranberries, and Shakeology in food processor; mix well until it forms a dough.
3. Shape mixture into fifteen 1-inch balls; flatten each slightly into the shape of a cookie.
4. Press both sides of cookies in coconut.
5. Refrigerate for 1 hour before serving.
